Please tell us a little bit about yourself:
In 2009, I started out in the world of coffee. Before that I repaired cars, but when I began to relate to coffee, I realized that I was born to be a barista. I think that as a barista, I am an architect of coffee—I am in charge of creating an experience of flavors for each person, keeping in mind that each person has a different tastes. I want to convert the ordinary into extraordinary. I want to be part of the history of Nicaraguan baristas. One day my mom told me that I was the best barista in Nicaragua—I did not believe her but now that she is not with me, I know that she told me the whole truth and that she had reason.
What are you excited to do while you are in Seoul?:
Get drunk on coffee.

Is there anyone you would like to thank or recognize, or who helped you to prepare for the WBC?:
First I thank God for giving me the talent, the attitude and the discipline to be an excellent barista, besides having given me great health and life during this journey. I am very grateful to my mother, Haydee Paramo for always supporting me in my career as a barista in all the pillars of my life, today she rests in the peace of our God. I thank my family very much. Thank you to my wife, Heydi Reyes, to my father, Bayardo Saballos, and to my son, Jorge Luis Paramo, for being my source of inspiration to go ahead and to be better every day. I want to thank all the Delafinca team. My coaches, Mayerling Gurdian and Heberto Rivas— many thanks for all the support they have given me. Many thanks to the whole team at Delafinca who have been working with us very closely. We are grateful to our advisor and coach, the four-time Guatemala Barista Champion, Jose de la Peña. A huge acknowledgment and thanks to the people with whom we chose, and helped process our coffee, who worked hard at our coffee farm every day.
How do you see the coffee industry changing in the future?:
I think we will realize that as the coffee industry evolves every day, we are generating new experiences in a way that we transmit it to people who love coffee.
Where do you see yourself in 5 years?:
I think only God can know, but I would like myself and my family to be in good health, and drinking more coffee.
What are your interests outside of coffee?:
My only real interest is my family—they are everything to me, are everything I have, and I would like to be a great example for them.
